Instructions
  1. Spray large saucepan with olive oil
  2. Add onion & garlic and cook on a medium heat until fragrant
  3. Add chicken and cook until browned
  4. Add Moroccan seasoning & stir through
  5. Add apricot nectar, capsicum, and carrot.
  6. Bring to the boil, then simmer for ~15 mins
  7. Add cornflour and cook for further 10mins – until sauce thickens
  8. Stir through chick peas before serving
