Instructions
  1. Heat oil in frypan over a medium heat, add onion and fry until browned.
  2. Once the onion is cooked, add mince to the pan and cook until well browned. Continue to stir and break up any lumps as it cooks.
  3. Dissolve stock cubes in 250ml of hot water.
  4. Once the mince is cooked, add in crushed tomatoes, carrot, zucchini and stock. Reduce heat to low and continue to stir to allow some of the juices to evaporate.
  5. Add in lentils, tomato paste, dried Tuscan herbs and salt & pepper.
  6. Simmer Bolognaise sauce over low heat for 20 minutes, stirring occasionally.
  7. Fill a saucepan (¾ full) with water and bring to the boil. Add the spaghetti and cook for 13 minutes, drain.
  8. Serve spaghetti topped off with Bolognaise sauce.
Recipe Notes

You can use any vegetables that you like in this dish, other vegetables that you could use include capsicum, mushrooms and celery.
