Ingredients

chicken breast
cut into pieces

onion
thinly sliced

garlic
crushed
Olive Oil spray

apricot nectar
400ml can

cup
dried apricots
sliced in halves

teaspoon
Moroccan seasoning
optional

tbsp
corn flour

carrots
cut into chunks

capsicum
cut into chunks

chickpeas
drained
Instructions
Spray large saucepan with olive oil
Add onion & garlic and cook on a medium heat until fragrant
Add chicken and cook until browned
Add Moroccan seasoning & stir through
Add apricot nectar, capsicum, and carrot.
Bring to the boil, then simmer for ~15 mins
Add cornflour and cook for further 10mins – until sauce thickens
Stir through chick peas before serving
